Potato Bread

Prep Time: 2 1/2 Hrs.
Cook Time: 1 Hr.
What you need:
* 2 large potatoes shredded or 2 c. mashed potatoes
* 1/2 c. warm milk
* 4 Tbsp. brown sugar
* 2/3 c. butter
* 4 tsp. salt
* 2/3 c. brown sugar
* 1 c. dry powdered milk
* 4 eggs, beaten
* 6 c. flour
* 2 Tbsp. yeast
What to do:
1. If using raw potatoes, shred the two potatoes and cook in 2/3 c. water until soft-about 5 min. Reserve the remaining water to add to yeast in step 3. Mash cooked potatoes, and let cool. Or you may simply use any leftover mashed potatoes.
2. Mix butter, salt, brown sugar, and dry milk, and add beaten eggs. Set aside.
3. Mix yeast with brown sugar and water.
4. Add yeast mixture to egg and butter mixture, then add the mashed potatoes, and flour.
5. Knead mixture well, let rise 1 hr. punch down dough, then form into loaves, and let rise again.
6. Bake 375ºF for 1 hr. Makes 2 loaves.
